Instructions

Cut the tofu into 2cm small cubes, making sure they are all roughly the same size.

Cut half a sausage into small cubes and chop some scallions for later use.

Boil water in a pot, add a pinch of salt, and blanch the tofu cubes to remove their beany smell. Do not overcook. Then, remove the tofu cubes and drain the water.

4. Step 4

Heat oil in a pot, add the tofu cubes and stir-fry. Add a pinch of salt to season, and then add half a small bowl of starch water to make the tofu cubes tender. Stir-fry for a while and set aside.

Beat one or two eggs with a little water to make an egg liquid. Adding water can make the scrambled eggs more tender and yellow.

Pour the stir-fried tofu cubes into the egg liquid and mix well, making sure each cube is coated with egg liquid.

Heat oil in a pot, pour in the tofu and egg liquid, and stir-fry. Add a little cooking wine to remove the egg smell, and then add a spoonful of soy sauce to adjust the color. When stir-frying, do not scatter the tofu, but push it around.

Add the sausage cubes, add a spoonful of beef powder to season, and stir-fry until everything is well mixed. Then, it is ready to be served.

After plating, sprinkle some chopped scallions on top, and the dish is complete.
