Cut the scallions into fine segments, mix soy sauce and vinegar in a bowl (salt can be added according to need), and blanch the mung bean sprouts.

When the noodles are about 80% cooked, add the cabbage. (According to personal preference, if you like it crunchier, you can add it later; otherwise, add it now.)
