Please refer to my recipe ‘Braising Good Lard and Frying Fragrant Oil Residue’ for the method of braising lard. Slice the purple onion.

Put lard and onion in the pot and fry over medium-low heat until golden and crispy.

Prepare the ingredients for the broth. I used 900ml of chicken broth, about 10 dried shrimp, and 30ml of old brine. Put these three ingredients in the pot and bring to a boil, then simmer over low heat for about 10-15 minutes until the aroma of dried shrimp comes out.

Remove the fried onion from the oil, filter and set aside. This amount can be used for several meals, and leftovers can be stored in the refrigerator.

Prepare the seasoning: use about 10ml of onion oil, 5ml of soy sauce, and a pinch of salt.

Take a large pot with a wide mouth, fill it with plenty of water, and cook the noodles. Do not put too many noodles at once. When the noodles sink and then float to the surface, add cold water, cover the pot, and wait for the water to boil again. Then, remove the noodles and rinse them with cold water.

Fold the noodles twice and put them in a bowl, then pour in the broth. The broth should be slightly lower than the noodles.
