1. Step 1

Wash the beef tripe clean and cut it into coarse strips; chop 2 slices of ginger and mince the garlic.

Add water to a pot, put in 2 slices of ginger, and bring to a boil over high heat. Add the cut beef tripe and blanch for about 1 minute, then add cooking wine and continue to cook for half a minute. Remove the beef tripe and immediately soak it in cold water, then remove and drain the water for later use.

Heat 2 large spoons of oil in a wok over high heat until the oil reaches 60% heat, then add dried chili peppers and 1 large spoon of chili sauce, and stir-fry over low heat until fragrant.

Pour the red oil into the beef tripe that has been soaked in cold water, add ginger, garlic, a small amount of salt, sugar, chicken essence, white vinegar, and cilantro, and stir well.
