Rinse the fish and marinate it with a small amount of salt and cooking wine for 10 minutes.

Heat oil in a wok, add the scallion, ginger, and garlic, and stir-fry until fragrant. Then, add the Sichuan peppercorns and dried chili, and stir-fry for 1 minute. Next, add the bean paste and stir-fry until fragrant. After that, add the marinated fish and stir-fry until it is almost cooked. Finally, add the cumin and thirteen spices, and continue stir-frying.
