Instructions

1. Step 1

Clean the chicken feet, cut off the nails, cut them in half, and soak them in cold water for 30 minutes.

2. Step 2

Prepare a pot, put the chicken feet in, add water to cover the feet, then add cooking wine, several slices of ginger, and cook for 10 minutes. After that, put them in ice water to cool, then rinse under running water, and finally soak them in ice water again.

3. Step 3

Take out the chicken feet, prepare the brine, mix salt, chicken bouillon, sugar, light soy sauce, and pickled pepper into the cooled water, taste and adjust the seasoning, then put the chicken feet in, making sure the water covers them for better flavor.
