Cut the fatty meat into thin slices and set aside, cut the lean meat into thin slices and marinate with a small amount of light soy sauce for 5 minutes.

Use the back of a knife to press the chili peppers flat, then cut them into diamond shapes.

Put the fatty meat into the pot, heat it over low heat to render the lard.
