Wash and steam the Chinese yam until it is cooked, then cut it into pieces and set aside. Slice the chili pepper, cut the scallion, ginger, and garlic, and prepare the cilantro.

Heat a small amount of oil in the wok, add the scallion and ginger when the oil is 80% hot, and stir-fry until fragrant. Add the Chinese yam and stir-fry evenly, then add 2 drops of soy sauce and a small amount of water. Stew over low heat, then switch to high heat to reduce the sauce. Add the green pepper and stir-fry, add vinegar, chicken essence, salt, and garlic. Sprinkle with cilantro and serve.
