Wash and chop the scallions into flower shape, slice 1 piece of ginger into small pieces, mince 1 clove of garlic, wash and chop the cilantro, prepare 2 tablespoons of Lao Gan Ma, and mix a small amount of water with cornstarch to make a water starch mixture. Cut the tofu into small cubes and blanch them in water for a while, then drain the water.

Tip for cutting tofu: Cut a horizontal knife in the middle, then cut 3 knives horizontally and 3 knives vertically.

Add an appropriate amount of water to the pot, bring to a boil, and then put the tofu cubes in to blanch for a while. When you see the tofu dancing in the water, you can take it out and rinse it with cold water, then drain the water.

Add a small amount of oil to the pot and heat it up. First, add the fermented soybeans, garlic, and ginger slices and stir-fry to bring out the flavor.

Add the tofu and gently shake the pot to coat evenly (it’s best not to use a spatula, as it may break the tofu). Add an appropriate amount of sugar, soy sauce, and salt, and shake the pot again to coat evenly. Cook for 1 minute, then add the water starch mixture, cover the pot, and cook for about 1 minute.
