Prepare a whole bamboo shoot. Since it’s hard to find a half one in the market, we bought a whole one. The middle part will be used to stir-fry with five-flower pork, the tip part will be used to braise with ribs, and the head part will be diced to stir-fry with sour vegetables.

Remove the shell, cut the middle part into slices, and blanch in boiling water with a little salt to remove the bitterness.
