Instructions

Clean the mandarin fish, remove the gills, cut into 3-5 segments, and set aside. Clean and cut the celery into 5cm long pieces, set aside.

Pour a small amount of peanut oil into the pot, add the pork fat and stir-fry until the fat comes out, then add the scallions and ginger and stir-fry until fragrant, add the fish segments and pan-fry slightly, pour in water to cover the fish, bring to a boil over high heat, then reduce the heat to low and simmer for about 20 minutes.

When the fish soup turns white, add the celery, add a small amount of salt to taste, and cook for 5 minutes before serving.
