Step 1
Prepare 3 salted egg yolks, 1 box of inner tofu or 1 large block of southern tofu, 1 segment of carrot and 1 segment of sausage, and 1 scallion.

Steam the salted egg yolks until cooked, then chop and mash them into a paste.

Heat a pan with oil, add the egg yolk paste and stir-fry constantly.

When the egg yolk paste is stir-fried until it bubbles up and expands in volume, it is done. Set it aside. Add a small amount of oil to the pan, add diced carrots and simmer over low heat to extract the red oil. The oil is ready when it turns a bright orange-red color, known as ’treasure oil'.

Combine the stir-fried egg yolk with the treasure oil and mix well. Add green beans and sausage, stir-fry until combined. Add half a bowl of water, bring to a boil, then add diced tofu and cook until it boils. Season with a pinch of salt and chicken essence. Mix 1 teaspoon of cornstarch with 2 teaspoons of water to make a slurry, then stir-fry until the slurry is well combined. Drizzle with sesame oil and serve.
