Instructions

Wash the bitter melon clean and peel the skin.

Cut the bitter melon in half and scoop out the white pulp inside with a small spoon.

Slice the bitter melon into very thin pieces, the thinner the better.

Boil water in a pot, then blanch the bitter melon for 40 seconds. Blanching for too long will make it bitter.

Immediately remove the blanched bitter melon and soak it in cold water.

Add a small amount of salt to the bitter melon, mix well, and let it sit for a while to remove excess water. Then, squeeze out some of the bitter water from the bitter melon by hand.

Soak a few dried wolfberries in warm water to rehydrate them. Note that wolfberries are optional, but they add a nicer appearance.

Place the bitter melon in a large bowl, add a small amount of salt, sugar, sesame oil, and toasted sesame seeds, and mix well.
