Stir-fried Bitter Melon with Braised Pork Belly

This Stir-Fried Pork Belly with Okra is a mouthwatering dish that combines tender, marinated pork belly with crisp, vibrant okra for a perfect balance of flavors and textures. The pork belly, rich in natural fats, is stir-fried until golden and fragrant, while the okra—blanched to retain its bright color and tenderness—absorbs the savory pork oils, making every bite juicy and flavorful. A touch of garlic enhances the aroma, and optional pork skin adds an extra layer of crispiness. Quick and easy to prepare, this dish is ideal for a weeknight meal yet impressive enough for guests. The okra keeps the dish light and fresh, ensuring it’s delicious without being overly greasy. Try this recipe for a satisfying, restaurant-quality stir-fry at home!

Before marinating the pork, if you don’t like too much fat, you can cut out some of the fat along with the pork skin. Set it aside for later use to stir-fry and make the dish fragrant.

Step 6
After stir-frying, add the marinated pork into the pot, quickly stir-fry for a few times, then cover the pot to cook. After about a minute, open the lid and flip the meat over, stir-fry for a few more times, and then cover the pot again to continue cooking.

Step 7
When the pork is cooked and a lot of oil has been released, you can add the okra into the pot and stir-fry together. The okra absorbs the oil and the dish will be flavorful, tender, and not greasy.
