Instructions

1. Step 1

Wash the beef and cut it into slices. To cut the beef, cut along the grain and then cut the slices into strips, cutting the long fibers to make the beef more tender. Use the back of the knife to tap the slices a few times, which will make the beef more tender when stir-fried. Marinate the beef slices with cooking wine, cornstarch, ginger threads, a small amount of salad oil, and water for a while.

2. Step 2

Heat a wok with an appropriate amount of oil, add the marinated beef slices and stir-fry until they are dispersed, then add a small amount of soy sauce and stir-fry until even, and set aside.

3. Step 3

Add a small amount of oil to the wok, stir-fry the chopped scallions and ginger threads until fragrant, add the celery segments and stir-fry, add flavor enhancer (or a small amount of soy sauce and salt) to season, then add the stir-fried beef and stir-fry until even, add a small amount of chicken essence to taste.
