Step 1
Prepare all the ingredients, marinate the pork belly with cornstarch and soy sauce for 30 minutes, slice the eggplant, slice the red onion, chop the scallion and garlic.

Heat oil in the wok, stir-fry the eggplant until it is soft and set aside.

Add star anise to the wok to bring out the fragrance, then add chopped scallion and stir-fry until fragrant, followed by the marinated pork belly, stir-fry until 50% cooked.

Add the red onion and stir-fry for about 2 minutes.
