Step 1
Wash the green beans and carrots, peel and dice the carrots. Boil water in a pot, add a few drops of oil, and blanch the green beans. Remove and rinse with cold water, then set aside. Clean the mushrooms, remove the stems, and cut them into quarters. Blanch in boiling water, then remove and drain.

Cut the meat into small pieces, mix with light soy sauce, dark soy sauce, sugar, and a small amount of cornstarch. Add 1 teaspoon of sesame oil and marinate. Heat a pot with oil, and stir-fry the meat until it changes color and is cooked through. Remove from the pot.

Leave some oil in the pot, add garlic slices and stir-fry until fragrant. Turn to high heat, add diced carrots and stir-fry for a while, then add green beans and continue stir-frying.

Add mushroom pieces and meat pieces, stir-fry quickly over high heat. Add seasonings (salt, light soy sauce, oyster sauce), and thicken with cornstarch water before serving.
