- carrots 100g
- scallions 50g
The sauce & seasonings
- ginger 10g (thinly sliced)
- dried chili 2-3 pieces
- garlic 10g (minced)
- star anise 1 piece
- cooking oil 2 tbsp
- cornstarch 1 tbsp (for marinating)
- cooking wine 2 tbsp
- light soy sauce 2 tbsp
- dark soy sauce 2 tbsp
- sugar ½ tbsp
- sesame oil 1 tsp
- chicken essence optional (1 tsp)

Step 1
Slice the lean meat into strips and marinate with cooking oil and starch, ginger paste for 10 minutes.

Cut the scallions into segments, ginger and dried chili into strips, and mash the garlic into a paste.

Break the beans into segments and cut the carrots into strips (can be cut a bit thicker).

Prepare all the ingredients.

Stir-fry the meat strips with oil.

Stir-fry the scallions, ginger, dried chili, and garlic paste in the same oil over low heat.

Add the beans, carrots, and star anise, and stir-fry until even. If five-spice powder is available, add a bit and stir-fry together.

Add 2 tablespoons (15ml) of cooking wine, 2 tablespoons of light soy sauce, 2 tablespoons of dark soy sauce, and half a tablespoon of sugar, stir-fry until even, then add the meat strips and stir-fry until combined. Add water to cover the ingredients.

Bring to a boil over high heat, then add the noodles. Do not stir, allowing the beans to settle at the bottom to prevent sticking.

Reduce heat to low and simmer for 5 minutes. Use chopsticks to turn the noodles that have not been coated with the sauce to the bottom and continue to simmer for 4 minutes.
