Wash and cut the pork with fat into small dices, wash and peel the potatoes, then cut them into small dices. Chop the scallions, ginger, and garlic into minced pieces.

Mix a large spoonful of six-month fermented bean paste with half a bowl of water and set aside.

Heat oil in a wok over medium heat, stir-fry the scallion, ginger, and garlic until fragrant.
