Put the pig heart into cold water, add cooking wine and ginger slices, cook until the pig heart can be easily pierced with a chopstick, then take it out and let it cool.

Wash and chop the pointed peppers and Sichuan peppercorns, set aside.

Slice the pig heart and place it on a plate, set aside.

Heat a small amount of oil in the wok, add the pig heart and stir-fry until golden, then add scallions, garlic, oyster sauce, soy sauce, and salt, continue to stir-fry, finally add pointed peppers and chicken essence, stir-fry until the peppers change color.
