First, remove the old tendons from the flat beans, then shine a light on them and remove the parts with insects. Divide the flat beans in half and tear them into two halves. Rinse them twice, then soak them in concentrated salt water for about 10 minutes. Finally, rinse them twice and drain the water to prepare for further processing. Heat a clean and oil-free pot, add the flat beans and stir-fry until they change color and some small yellow bubbles appear on the surface.
