Cut the rabbit meat into 1cm small cubes, wash and soak until no blood is visible, then marinate with salt, half of the cooking wine, soy sauce, starch, and egg white for 20 minutes to absorb the flavor. Cut the green and red small chili peppers into 0.5cm long segments. Mince the pickled peppers and pickled ginger.

Heat the oil in a wok to 30% heat, add the rabbit cubes and stir-fry until they are scattered and discolored. After they are cooked through, turn off the heat and drain the oil.
