Step 1
Buy 1 kg of front shoulder meat and grind it into minced meat. The front shoulder meat with moderate fat content is the best for making meat filling. Heat oil in a pot, add ginger and minced meat, and stir-fry. Do not add sauce in a hurry.

Continue stir-frying until the minced meat is dry and oily, then add a small amount of cooking wine to remove the fishy smell. After stir-frying again, add yellow bean sauce and sweet bean sauce and continue stir-frying until fragrant. Do not worry about the excess oil, as it will not be necessary to add more oil when eating the noodles.

When the sauce is fragrant, add scallions and stir-fry until fragrant, then turn off the heat.

Transfer the stir-fried mixture to a box. When eating noodles, add an appropriate amount of soy sauce, a small amount of salt, garlic paste, scallions, chili oil, and Sichuan pepper oil or Sichuan pepper powder (add chili oil, Sichuan pepper oil, and MSG according to personal preference) to the bowl. Add boiling water or noodle water, then add two tablespoons of the stir-fried mixture. A delicious bowl of noodles is ready.
