Wash the smoked pork and celery clean.

Cut the smoked pork into slices, cut the celery into sections, cut the garlic sprouts into oblique slices, cut the dried chili into oblique slices, and slice the ginger and garlic. Set aside.

Stir-fry the dried chili and Sichuan peppercorns until fragrant, then add the sliced ginger and garlic and stir-fry until fragrant. Add the pork slices and stir-fry until 70% cooked, then remove and set aside.
4. Step 4

Add more oil and stir-fry the celery and green chili until 70% cooked, then add the stir-fried pork slices and stir-fry briefly. Dish out and serve.
