Instructions

1. Step 1

Cut the tofu into cubes and fry them in a pot of oil until they turn golden brown, then remove and drain the excess oil.

2. Step 2

Put an appropriate amount of oil in the pot, add scallions, ginger, garlic, and 2 pieces of cassia, and stir-fry until fragrant.

3. Step 3

Add the fried tofu, gently stir-fry a few times, then pour in boiling water to cover the tofu.

4. Step 4

Add soy sauce, cinnamon, 2 pieces of cassia, Sichuan peppercorns, salt, and sugar (optional, according to personal taste), and gently stir to mix well.

5. Step 5

Cover the pot, simmer over low heat (the longer the stewing time, the more flavorful it will be).

6. Step 6

When the water is almost dry, add an appropriate amount of chicken essence.
