Soak and cut the dried tofu and wood ear mushrooms into pieces, cut the carrots and cucumbers into diamond-shaped slices, and chop the scallions, ginger, and garlic into small pieces.

Boil water in a pot, blanch the carrots, wood ear mushrooms, and dried tofu separately, then remove and cool them.

Mix the blanched ingredients with cucumbers, season with salt, sugar, soy sauce, vinegar, and cooking wine, and place the scallions, ginger, and garlic on top.

Heat a clean pot with an appropriate amount of oil, stir-fry the Sichuan peppercorns until they turn brown and fragrant, then pour the oil directly over the scallions, ginger, and garlic.
