About This Recipe
This Huaiyang-Style Dried Tofu Shreds Soup is a delicate and flavorful dish that combines tender shredded chicken, savory ham, earthy mushrooms, and aromatic dried shrimp in a rich chicken broth. The key to its depth of flavor lies in the fine shredding of ingredients—especially the dried tofu, which is blanched to remove any beany taste while keeping its satisfying texture. Simmered gently in a fragrant broth enriched with chicken oil, every spoonful delivers a harmonious blend of umami and subtle sweetness. The dish is elevated by the use of premium Huaiyang dried tofu, though regular dried tofu works beautifully as a substitute. Perfect as a light yet nourishing meal, this soup is garnished with extra ham and chicken shreds for an elegant finish. A comforting, restaurant-quality recipe that’s surprisingly simple to make at home!

1

Step 1
Cut the dried tofu into fine shreds. If possible, use the dried tofu from Huaiyang, but dried tofu can be used as a substitute.
2

Step 2
Cut the ham into fine shreds. Soak the mushrooms in water until they are rehydrated, then cut them into fine shreds. Blanch the chicken breast in boiling water until it is cooked, then shred it into fine strips for later use.
3

Step 3
Fill a pot with water and bring it to a boil. Add the dried tofu shreds and cook until the water boils again, then turn off the heat.
4

Step 4
Remove the tofu shreds from the pot, rinse them with cold water to remove the beany flavor of the tofu.
5

Step 5
Bring the chicken broth (including chicken oil) to a boil, add the dried shrimp, and cook until it boils. Then add the ham, mushrooms, chicken shreds, and tofu shreds. Simmer over low heat for about 10 minutes until the flavors are absorbed.

Step 6
Serve the dish, garnished with additional ham and chicken shreds on top.
