Step 1
Peel the shrimp, trying to keep the skin intact, and set aside after draining the water. Cut open the back of the shrimp, remove the shrimp thread, and put it in a bowl. Marinate with cooking wine, salt, and pepper, then add a little starch and mix well.

Heat oil in a pot until it reaches 60% heat, then put the shrimp into the pot one by one. After they are shaped, remove them from the pot. Leave a small amount of oil in the pot, add the shrimp shells, and stir-fry until the oil turns red. Remove the shells, then add vinegar and sugar according to your taste, and a little water, salt. Simmer and thicken with water starch.
