Slice the fish and soak it in red tea soup for at least 10 minutes, then remove and drain the water, and coat with a layer of cornstarch.

Heat oil in a pot, add the fish slices and fry until crispy, then remove.

Prepare another pot, stir-fry the chopped scallions, ginger, and garlic, pour in the tea soup, add light soy sauce, sugar, and a small amount of cooking wine, bring to a boil, add the fried fish and cook until the flavor is absorbed, finally add some chopped cilantro and scallions before serving.
