Blanch the pig trotters, then heat the pot, add the soaked mushrooms and rock sugar, stir-fry until the rock sugar melts and the pig trotters are slightly caramelized.

Add thirteen spices, soy sauce, and the water used to soak the mushrooms (about 800ml, or directly add water if using fresh mushrooms) and bring to a boil. At this time, taste the broth and adjust the proportion of soy sauce and rock sugar according to your taste.
