Soak the chicken in hot water to remove blood.

Clean and cut the chicken into pieces after washing.

Prepare sauce, garlic, and chili strips.

Heat the wok with oil, add ginger, garlic, and chili strips, and stir-fry until fragrant.

Add the chicken and stir-fry until it changes color, then add soy sauce, Shaoxing wine, and bean paste, and stir-fry for a few minutes. Add water and cook until the sauce thickens. You can add scallions if you like, but I didn’t add them because I don’t like them.
