1

Step 1
Heat a pan over low heat and place the chicken skin side down. Note that no oil is needed!
2

Step 2
Cook over low heat until the chicken skin is golden brown on one side, then flip and continue cooking.
3

Step 3
Prepare the supporting ingredients: chop the scallions into segments, slice the ginger, and clean and dry the garlic cloves. You can also cut some green and red bell pepper blocks and onion blocks, but they are optional.
4

Step 4
As the chicken cooks, it will release oil, which is why no additional oil is needed.
5

Step 5
Once the chicken is golden brown on both sides, add the garlic cloves and ginger slices, and stir-fry until fragrant.
6

Step 6
Add 100ml of cooking wine and stir-fry until the alcohol is fully evaporated.
7

Step 7
Add an equal amount of soy sauce to the cooking wine, and stir-fry until the sauce is fragrant.
8

Step 8
Add an equal amount of rock sugar to the cooking wine and soy sauce, and stir-fry until the sugar is dissolved.
9

Step 9
As the sugar dissolves, a light caramel color will appear.
10

Step 10
Once the sauce is thick, add the scallion segments, green and red bell pepper blocks, and stir-fry.
11

Step 11
Drizzle with sesame oil, stir-fry for a few seconds, and then turn off the heat.
12

Step 12
The dish is complete, and if possible, you can add a few slices of nine-layer tower before turning off the heat to enhance the flavor.
