Cut the potatoes into cubes and fry them in oil until they turn golden brown. Mix 50ml of oyster sauce, 25ml of light soy sauce, and 25ml of Chinese cooking wine in a bowl. Heat oil in a pan, sauté the scallion segments, then pour in the mixed sauce and 1 cup of hot water, and bring to a boil.
