Three Delicacies Dumplings

Three Delicacies Dumplings

These homemade potstickers are a deliciously crispy and juicy treat, packed with a savory filling of cabbage, pork, black fungus, shiitake mushrooms, and dried shrimp for an umami-rich flavor. The dough is simple to prepare, just like dumpling wrappers, but the folding technique is even easier—simply pinch the edges into a pouch for the perfect crispy-to-tender texture. Pan-fried to golden perfection with a thin layer of oil and a splash of water, these potstickers develop a satisfying crunch while staying juicy inside. The key is the layered cooking method—steaming and frying in stages—for an irresistible contrast of textures. Perfect as an appetizer or main dish, these potstickers are a crowd-pleaser with their rich, flavorful filling and crispy bottom. Serve with soy sauce or chili oil for dipping and enjoy a restaurant-quality bite at home!

Instructions

1. Step 1

Step 1
Prepare the filling, which can be made with various ingredients such as pork, seafood, or vegetables. This time, I used a combination of cabbage, pork, black fungus, shiitake mushrooms, and dried shrimp in a 1:1 ratio.

2. Step 2

Step 2
Mix the dough to make the wrapper, similar to making dumpling wrappers.

3. Step 3

Step 3
Wrapping the potstickers is much simpler than wrapping dumplings.

4. Step 4

Step 4
Hold the center of the wrapper and squeeze the edges to form a pouch, making sure to leave some space for air to escape.

5. Step 5

Step 5
Place the potstickers in a pan, leaving some space between each one, and brush with a thin layer of oil. Add some water to the pan, ideally using a watering can to pour water into the gaps between the potstickers.

6. Step 6

Step 6
Cover the pan with a lid and cook for 2-3 minutes, then add more water. Repeat this process until the potstickers are cooked through, about 5 minutes. You can add a small amount of oil towards the end of cooking.
