Cut the tofu into 2cm cubes.

Pour oil into the pot, and when the oil is hot, slide the tofu into the pot and fry, shaking the pot or using a spoon to gently stir.

When the surface of the tofu is golden, add a spoonful of soy sauce, then evenly pour the beaten egg liquid over the tofu, making sure to cover the entire surface, and flip the tofu to coat it evenly.

Add an appropriate amount of water to just cover the tofu. If you prefer more broth, add a bit more. Sprinkle with scallions and adjust with a small amount of salt. Stew for a while.
