Tomato and Pork Liver Soup
This savory Pork Liver and Tomato Soup is a quick, flavorful dish that combines tender pork liver with tangy tomatoes in a rich beef broth. Perfect for a comforting meal, the liver is first soaked to remove any bitterness, then cooked just right—keeping it soft and delicate. Fresh scallions and ginger add aromatic depth, while the tomatoes lend a bright, slightly sweet balance. A splash of beef broth enhances the umami richness, and a final garnish of fresh cilantro or scallion flowers brings a refreshing finish. Ready in minutes, this soup is both nutritious and delicious, making it an ideal choice for a light yet satisfying dish. Try it for a simple, wholesome meal packed with bold flavors!

1. Step 1

Soak the pork liver in cold water for 4-5 minutes before cooking, then remove and drain. This can not only clean the liver but also remove the fishy smell. Slice the tomatoes.
2. Step 2

Heat a small amount of oil in the wok, add the scallion segments and ginger slices to stir-fry until fragrant, then add the tomatoes and stir-fry for a while before adding the broth.
3. Step 3

I used beef broth here. Bring to a boil for 2 minutes, when the tomatoes are relatively soft, you can add the pork liver.
4. Step 4

Add some salt, the pork liver is easy to cook, usually it can be done in 1 minute. Add some cilantro or scallion flowers and it’s ready to serve.
