Cut the tofu into small cubes and pan-fry in oil until lightly browned. The oil temperature should not be too low to avoid sticking to the pan.

Peel and dice the tomatoes, and chop the celery and onion into small pieces for later use.

Heat the oil in a wok, stir-fry the scallion whites and ginger shreds until fragrant, then add the onion and celery and stir-fry until fragrant. Add half of the diced tomatoes, a small amount of tomato sauce, the pan-fried tofu, a small amount of water, and some sugar, salt, and chicken powder for seasoning. Cook until the sauce thickens, then add the remaining diced tomatoes and cook over high heat to reduce the sauce.
