Instructions

1. Step 1

Prepare the ingredients. Cut the dried chili peppers into small segments and remove the seeds. Cut the green peppers into 2cm segments and the scallions into 1.5cm segments.

2. Step 2

Rinse the rabbit meat in clean water until there is no blood, cut it into 2cm cubes, and marinate it with salt, cooking wine, soy sauce, egg white, and starch for 20 minutes to absorb the flavors.

3. Step 3

Add more oil than usual to the wok, heat it over medium heat until it reaches 50% heat, then add the rabbit meat and stir-fry until it is scattered, and drain excess oil.

4. Step 4

Pour in the pickled wild pepper and stir-fry over medium-low heat until the aroma is released.

5. Step 5

Add ginger slices, scallion segments, dried chili segments, and Sichuan peppercorns, and continue to stir-fry.

6. Step 6

Adjust the seasoning with salt, chicken powder, cooking wine, pickled pepper water, and sesame oil. After slightly thickening the sauce, add the green pepper segments and stir-fry until they are cooked.
