Instructions

Wash the pork bones clean, put water in a pot and bring to a boil, then blanch the pork ribs to remove blood and impurities, skim off the foam and set the ribs aside.

Peel and deseed the winter melon, wash clean, and cut into pieces.

In another pot, add spices, scallion segments, ginger slices, and Sichuan peppercorns, bring to a boil, then put the cooked pork ribs back into the pot, bring to a boil over high heat, then reduce heat and simmer for half an hour.

Then add the winter melon pieces, add an appropriate amount of salt, cook for 15 minutes, add chicken essence and scallion segments, drizzle with a few drops of sesame oil and it’s ready to be served.
