Clean the pork tenderloin and cut it into slices, then coat with cornstarch and marinate for a while. Beat the eggs in a bowl, clean and slice the cucumber, peel and clean the bamboo shoots, and blanch them in boiling water.

Heat oil in a pan, pour in the egg mixture when the oil is 50% hot, and scramble the eggs with a spatula when they are set. Remove the eggs from the pan and set aside.
