Prepare the main ingredients.

Slice the garlic, ginger, and carrots, cut the chili peppers into shreds, and cut the cilantro into sections for later use.

Cut the duck meat into pieces, then blanch them in cold water, and drain for later use.

Heat a little oil in the pot, stir-fry the duck meat, add cooking wine and a tablespoon of Pixian bean paste, and stir-fry until the duck skin is crispy, then set aside.

Heat oil in the wok, add garlic, ginger, and half of the chili pepper shreds, and stir-fry until fragrant, then add star anise, cloves, cardamom, cinnamon, and bay leaves, and stir-fry until fragrant.
